A chicken wonder nugget can keep the doctor away!

Hidden veggie: red and yellow bell peppers, yellow summer squash, spinach

Hidden grains: flax seeds, chia seeds

Fiber: wheat germ

A nugget a day can keep the doctor away! Especially when it has three vegetables and three essential grains and greens with the protein from chicken! Could it get even better?

Have you had those days when you thought, ugh.. how do I get my husband to eat vegetables? Or, when your child just picks out the bell pepper skins off the pasta or a casserole dish? 

Speaking for myself - with a full time job and two kids (well three, if you add my better half ;) ), I had to change the conversation on the dinner table. It starts with pleasing the eye and the taste buds.

Summer squash is one of those low calorie vegetable with the just the right amount of carbs, fiber and vitamin C. When combined with a grain, it's a balanced meal in itself. No wonder, the first foods you even offer to a baby is summer squash!

Add to this, the goodness of red bell pepper and yellow bell pepper, that are packed with vitamins and minerals, now we are talking! Red bell peppers are said to promote eye health and prevent anaemia.

Stir in some spinach - we cannot forget Calcium now, can we? ;) Add 1-2 sprigs of rosemary. Cook it until tender, about 2-3 mins.

Blend the vegetables, add 1 tbsp of flax seeds, ground chia, and wheat germ. Mix with about 2 lbs of ground chicken and one egg for binding.

Cook them at 400 degrees F, for about 20-25 minutes or so, flip them midway. They should be slightly brown on each side. Eat with Ketchup or your favorite sauce! Keep in mind, they will continue to cook once you take them out. If you'd like, you can also brush them lightly with canola or coconut oil for a nicer color of brown.
